Tonight:  One pot kale and quinoa pilaf

Kale, quinao, pine nuts, sweet lemon zest & juice, and a tease of goat's cheese. All in one pot. So simple. So healthful. Get the recipe here. 

Tomorow: Roasted Teriyaki mushrooms and brocolini soba noodles

Glazed-then-grilled button mushrooms, boiled gluten-free soba noodles, still-crunchy steamed brocollini, all topped with a sticky honey-giner-sesame sauce. Easy, healthy, harmless. Get it.

Thursday: One pot creamy spinach lentils

Sauteéd carrots, celery and onions, simmered with soft lentils and potatoes in a thyme fragrant broth. Served with fresh baby spinach wilted in and a splash of red wine vinegar. Perfection. Serve it with brown rice or quinoa. And sub white potatoes for sweet potatoes for extra nutrients. Here's the whole recipe! 

Friday: Black bean & Tempeh tacos with cashew cheese sauce

Don't be deceived by the many ingredients in this recipe - it's essentially just corn tacos stuffed with fried black beans, onions and tempeh (optional), fresh red shredded cabbage, avocado and smothered in a home made cashew, nutritional yeast sauce. Oh and the LIME. Go check it. Viva healthy tacos! Fill your corn circles with whatever you want - roasted sweet potatoes, mango cubes and shrimp, sautéed mushrooms, grilled fish. If you take one thing from this recipe, let it be the sauce.
